This colorful pasta recipe uses red cabbage to flavor and color this blue pasta sauce. When steeped in water, the red cabbage acts as a dye and imparts a beautiful cerulean blue color to this unique sauce.
Ingredients
Serves 8
1 | Package Barilla® Al Bronzo® Mezzi Rigatoni pasta |
½ | Red cabbage, finely sliced |
12 | Ounces king prawns, peeled and deveined (or 21- 25 prawns) |
1 | Clove garlic, peeled |
2 | Tablespoons extra-virgin olive oil, divided |
1 | Lemon, zested |
1 | Red chili, sliced |
½ | Teaspoon baking soda |
To taste | Salt and fresh cracked black pepper |

Method
Step 1
Heat a large, skillet over medium heat and add a tablespoon of olive oil and the garlic. Cook for a few minutes until garlic is starting to brown.
Step 2
Add red cabbage and season with a pinch of salt; stir. Add 1 cup water. Cover and simmer for 10-12 minutes.
Step 3
Meanwhile, bring a large pot of water to a boil and cook pasta according to package directions; reserve 1 1/2 cups of pasta cooking water.
Step 4
Remove lid from the skillet and add baking soda and a ladle of pasta cooking water if needed. Stir and it will start to turn blue. Return lid and cook for another 4-5 minutes until cabbage is soft.
Step 5
Remove skillet from heat and cool for 5 minutes, then transfer to a blender. Add a splash of pasta water if needed. Blitz until smooth.
Step 6
Heat a large skillet over medium-high heat and add a tablespoon of olive oil. Once hot cook the prawns for 2-3 minutes until starting to turn pink/cooked. Set aside on a plate.
Step 7
Add drained pasta to the skillet along with the blue sauce and a splash more pasta cooking water if needed. Stir until combined.
Step 8
Plate blue pasta and top with prawns, sliced red chili and lemon zest.
