1 Pint Yellow Cherry Tomatoes, Quartered
2 Pints Red Cherry Tomatoes, Quartered
To Taste Sea Salt and Black Pepper
6 Tablespoons Extra Virgin Olive Oil
1 Clove Garlic, Minced
10 Basil Leaves, Cut Julienne
¾ Cup Ricotta Salata Cheese, Shredded

Method

Step 1

Bring a large pot of water to boil.

Step 2

In a large bowl, add tomatoes, salt, pepper, olive oil, garlic and basil.

Step 5

Drain pasta and toss into tomato mixture.

Step 6

Finish with cheese on top and serve.
