Ingredients

| 1/3 | Cup Extra Virgin Olive Oil | 
| 2 | Cloves Garlic Minced | 
| 3 | 1/Fresh Lemon | 
| ½ | Cup White Wine | 
| 1 | Cup Vegetable Stock (May Substitute Fish Stock) | 
| ½ | Pound Bay Scallops | 
| ½ | Pound Shrimp | 
| 1/3 | Cup Sun Dried tomato | 
| 8 | Ounces Arugula chopped Stems Removed | 
| ½ | Cup Parmigiano-Reggiano cheese grated | 
| To taste | Salt | 
| To taste | Black pepper freshly ground |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Zest lemon to yield 1 teaspoon lemon zest.
Step 3
Heat olive oil in a large skillet.
Step 4
Add garlic; sauté until golden.
Step 5
Add wine and stock.
Step 6
Simmer until half evaporates.
Step 7
Add sun-dried tomatoes, shrimp and bay scallops.
Step 8
Simmer gently until shellfish is firm and cooked through.
Step 9
Stir in lemon zest and arugula.
Step 10
Season with salt and pepper; remove from heat.
Step 11
Cook Angel Hair according to package directions.
Step 12
Drain.
Step 13
Add pasta to sauce; mix well.
Step 14
Add cheese and mix again.
