Ingredients
Serves 7
| 1 | Box Barilla® Protein+™ Spaghetti | 
| 1/3 | Cup Extra Virgin Olive Oil | 
| 1 | Clove Garlic | 
| 2 | Medium Eggplants Diced | 
| ¼ | Cup Flour | 
| ½ | Cup Kalamata Pitted Olive Halved | 
| 2 | Pints Cherry Tomatoes Halved | 
| ½ | Cup Pecorino Cheese Grated | 
| 6 | Leaves Fresh Basil Sliced Very Thin |

Method
Step 1
Sprinkle eggplant with salt in colander.
Step 2
Set aside to drain for 1 hour.
Step 3
Bring a large pot of water to a boil.
Step 4
Heat olive oil in a large skillet.
Step 5
Press the garlic clove with the flat of a knife.
Step 6
Add to skillet and sauté for 1 minute.
Step 7
Sprinkle eggplants with flour.
Step 8
Add to skillet and cook until tender.
Step 9
Stir in tomatoes and olives.
Step 10
Cook 2 more minutes
Step 11
Cook pasta according to package directions.
Step 12
Drain.
Step 13
Combine pasta with sauce and mix well.
Step 14
Add cheese and basil.
