Kid-Friendly Cheddar Mac & Cheese with Snowfall Pasta

This simple kid friendly mac & cheese recipe takes less than 30 minutes to prep and assemble. Heavy cream is brought to a boil with white cheddar, parmesan cheese, salt and pepper and reduced to create a thick, creamy, glossy sauce. Toss in Barilla Snowfall (a snowflake shaped pasta), and top with crunchy breadcrumbs.

For the Mac & Cheese
| 1 | Box Barilla® Snowfall pasta |
| 2 | Cups heavy cream |
| 1½ | Cups white cheddar cheese, grated |
| 1/3 | Cup Parmigiano-Reggiano cheese, grated |
| 1/2 | Teaspoon Kosher Salt, more to taste as needed |
| 1/4 | Teaspoon black pepper, and more to taste as needed |
For the Topping (Optional)
| ¼ | Cup panko breadcrumbs |
| ½ | Tablespoon extra virgin olive oil |
| 1 | Tablespoon parsley, chopped |
| 2 | Tablespoons Parmigiano-Reggiano cheese, grated |

Method
Step 1
(Optional) In a skillet over medium heat add panko breadcrumbs and olive oil. Toast for 1-2 minutes or until golden brown. Remove from heat, stir in parsley, and set aside.
Step 2
Bring a large pot of water to a boil and cook pasta according to package directions.
Step 3
Meanwhile, in a saucepan over medium heat, bring the heavy cream to a low boil. Whisk in white cheddar cheese and parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Make sure the cheese is fully incorporated and the mixture has thickened.
Step 4
Drain pasta well and mix with cheese sauce. Adjust seasoning to taste.
Step 5
(Optional) Top with toasted breadcrumbs and cheese.
