Barilla® Three Cheese Tortellini with Prosciutto and Wild Mushrooms
Ingredients
Serves 6
| 1 | Package Barilla® Three Cheese Tortellini |
| ½ | Small onion, diced |
| 2 | Tablespoons extra virgin olive oil |
| 8 | oz. package fresh wild mushrooms |
| 1 | Cup prosciutto, julienne |
| 1 | ½ Cups heavy cream |
| To taste | Salt and black pepper to taste |
| 1/3 | Cup Parmigiano cheese, grated |
| ½ | Tablespoon parsley, chopped |

Method
Step 1
Bring a large pot of water to boil.
Step 2
Meanwhile sauté the onion in olive oil until translucent, about four minutes.
Step 3
Add mushrooms and sauté for 2-3 minutes or until lightly browned.
Step 4
Add the prosciutto and render for 1 minute then add the cream.
Step 5
Season with salt and black pepper.
Step 6
Cook the tortellini according to the package directions, drain and toss with sauce.
Step 7
Stir in Parmigiano cheese and parsley before serving.
