Ingredients
Serves 4
| 1 | Cup (dry) Barilla® Protein+® Stars pasta |
| 3 | Tablespoons extra virgin olive oil |
| 1 ½ | Cups white onion, diced |
| 1 ½ | Cups carrot, diced |
| 1 | Cup celery, diced |
| 2 | Cloves garlic, minced |
| 1 | Pound boneless, skinless chicken breast, small dice |
| 12 | Cups of chicken stock |
| 1 | Teaspoon fresh rosemary, chopped |
| ¼ | Cup Parmigiano-Reggiano cheese, grated |
| To Taste: | Salt & Black Pepper |

Method
Step 1
In large stockpot or Dutch oven sauté diced carrots, celery, and onion over medium-high heat for 4 minutes, stirring occasionally.
Step 2
Add chicken and sauté until browned, about 5 minutes. Add garlic and sauté for another minute.
Step 3
Pour chicken stock into the pot. Add rosemary, salt, and pepper to taste. Bring to a boil over high heat.
Step 4
Once it boils, reduce heat to medium, cover pot and simmer for 10 minutes.
Step 5
Add pasta and cook for 8-9 minutes; stir occasionally.
Step 6
Ladle soup into bowls and top with cheese before serving.
