| 5 | Ounces mixed greens | 
| 1 | Cucumber, julienned | 
| 1 | Carrot, julienned | 
| 1 | Pint cherry tomatoes, halved | 
| 1 | Cup radishes, sliced thin | 
| 1 | Cup dried cranberries | 
| 1/3 | Cup extra virgin olive oil | 
| 1 | Lemon juice and zest | 
| 1 | Clove garlic, minced | 
| 1 | Teaspoon Dijon mustard | 
| ½ | Teaspoon honey | 
| 1 | Teaspoon parsley, chopped | 
| To taste | Salt and black pepper |

Method
Step 1
Cook pasta according to package directions and drain well.
Step 2
Whisk all ingredients for the vinaigrette together.
Step 3
Place mixed greens and pasta into a bowl and toss with vinaigrette.

Top with cucumber, carrot, tomatoes, radishes, and cranberries.
