Ingredients

Serves 8

1 Box Barilla® Rotini pasta
1 Jar Barilla® Vegan Pesto
2 Tablespoons extra virgin olive oil
7 Ounces thin asparagus spears, cut into 2-inch-long pieces
2 Ounces mixed peppers, finely sliced
2 Tablespoons basil leaves
To taste Fresh basil for topping

Method

Step 1

Bring a large pot of water to a boil; cook pasta according to package directions and drain well.

Step 2

Meanwhile, heat a skillet until hot, add olive oil, asparagus and peppers; sauté for 3-4 minutes until browned and just tender.

Step 3

Toss cooked pasta with the vegetables and the Pesto until the pasta is well coated.

Step 4

Serve topped with fresh basil and enjoy!
