| 4 | Tablespoons Extra Virgin Olive Oil |
| 2 | Cloves Garlic, Minced |
| 1 | Pint Multi-Color Cherry Tomatoes, Cut Lengthwise |
| 8 | Ounces Asparagus, Sliced Thin |
| 1 ½ | Cups Vegetable Broth |
| ½ | Cup Pecorino-Romano Cheese, Grated, Divided |
| For Topping | Fresh Parsley |
| To Taste | Sea Salt & Black Pepper |

Method
Step 1
In a skillet over low/medium heat olive oil and add garlic. Sauté until translucent, about 1-2 minutes. Add mushrooms and cook an additional 4-5 minutes, or until well browned.
Step 2
Add asparagus and cook for an additional 30 seconds. Add broth, season, and bring to a simmer.
Step 3
Meanwhile, bring a large pot of water to boil. Cook pasta according to package directions. Drain pasta and add pasta to the sauce.
Step 4
Remove from the fire, add ½ of the cheese and mix well. Before serving top with remaining cheese, and parsley.
