Ingredients

| 1 | box Barilla® Orzo pasta | 
| 3 | Pints multicolor cherry tomatoes, halved | 
| 4 | Small cucumbers, peeled and sliced | 
| 1 | Cup red onion, diced | 
| 2 cups | feta cheese, crumbled | 
| 1/2 | Cup Black olives (optional) | 
| 6 | Tablespoons extra virgin olive oil, divided | 
| 2 | Tablespoons red wine vinegar | 
| 2 | Teaspoons dried oregano | 
| To taste | Sea salt & black pepper |

Method
Step 1
Cook Barilla Orzo pasta as directed on the package but drain 1 minute earlier. Lay orzo past flat on a baking sheet and drizzle with 1 tablespoon of olive oil. Meanwhile, cut all the vegetables (tomatoes, cucumber, red onion, and olives) as described.
Step 2
To make the Greek salad dressing: In a bowl emulsify 5 tablespoons of olive oil with salt, pepper, vinegar and oregano.
Step 3
Mix cold Barilla Orzo pasta, crumbled feta, vegetables and dressing and any additional salt and pepper to taste.
