Method
Step 1
Preheat oven to 475 °F with a pizza stone on the middle rack.
Step 2
Stretch the dough to a 13-inch diameter disc. Place on a sheet of parchment paper; spread the pesto evenly. Top with cherry tomatoes.
Step 3
Bake until bubbly and slightly brown, for about 12 minutes.
Step 4
Take out, add chicken and top with cheese and finish in the oven for an additional 6-7 minutes.
Tip
To grill the chicken season with salt, pepper and 1 tablespoon olive oil and grill on both sides until fully cooked at 165 °F internal temperature, about 12 minutes.
