This creamy pasta works because of miso’s ability to emulsify with pasta water creating a light sauce packed with Umami. Only 6 ingredients, this quick and easy pasta recipe relies on pantry staples – the mushrooms can be substituted for shitake or cremini.

| 1 | Box Barilla® Thick Spaghetti Pasta | 
| 3 | Tablespoons toasted sesame oil, divided | 
| 12 | Ounces brown shimeji mushrooms [can substitute equal amount of sliced shitake] | 
| 4 | Tablespoons miso paste | 
| 1 | Cup Nori, sliced julienne | 
| To Taste | Black pepper |

Method
Step 1
Bring a large pot of water to a boil, cook pasta according to package directions in unseasoned water. Reserve 1 cup of pasta cooking water.
Step 2
In a skillet sauté mushrooms with 2 tablespoons sesame oil for several minutes, season with black pepper. Place in a bowl and set aside.
Step 3
Add a cup of pasta cooking water to the same skillet, add miso paste and dilute over medium heat.
Step 4
Stir in mushrooms. Drain spaghetti and add to the skillet, toss, and combine.
Step 5
Finish with remaining sesame oil and top with Nori before serving.
