Al Bronzo® Fusilloni Creamy Zucchini Pasta

Onion & Zucchini are seared in olive oil in high heat. Cream is added to the zucchini and simmered to create a glossy sauce. Combine with Al Bronzo Fusilloni pasta and top with cheese and parsley.

3 | Tablespoons extra-virgin olive oil |
1 | Cup sweet onion, diced |
1 | Clove garlic, minced |
4 | Small zucchini, diced 3/8 inch |
1 | Cup heavy cream |
3/4 | Cup Parmigiano-Reggiano cheese, grated |
1 | Tablespoon fresh Italian parsley, chopped |
To taste | Salt and black pepper |

Method
Zucchini Pasta
Zucchini is vegetable with a high water content. Searing zucchini over high heat with oil will help reduce moisture and prevent your zucchini pasta from becoming too watery.
Step 1
Bring a large pot of water to a boil, cook pasta according to package directions.
Step 2
Meanwhile in a skillet over medium high heat sauté onion with olive oil for three minutes, add garlic and two minutes later add zucchini. Cook for two more minutes over high heat, add cream, season with salt and pepper and bring to simmer, cook for 3 more minutes.
Step 3
Drain pasta, toss with creamy zucchini sauce over high heat until well combined.
Step 4
Turn the heat off, finish with cheese and parsley before serving.
