Ingredients
Serves 6
| 1 | Box Barilla® Snowfall pasta |
| 3 | Cups diced butternut squash (½ for puree, ½ for roasting) |
| 3 | Tablespoons extra virgin olive oil, divided |
| 1 ½ | Cups vegetable broth |
| 1 | Teaspoon nutmeg |
| 1 | Burrata cheese |
| ½ | Cup pistachio nuts, chopped |
| To Taste | Salt & White Pepper |

Method
Step 1
Pre-heat oven to 425° F and roast ½ of the butternut squash with 2 tablespoons olive oil, salt, and pepper until golden brown and fully cooked, about 6-7 minutes.
Step 2
Meanwhile, in a small saucepan add broth, nutmeg, and remaining butternut squash. Bring to a simmer and let simmer for 5 minutes. Season with salt and pepper.
Step 3
Add the broth mixture to a blender with remaining olive oil and puree.
Step 4
Cook pasta according to package directions, drain and toss with the sauce.
Step 5
Top with burrata cheese, roasted butternut squash and pistachio nuts.
