This easy pasta salad recipe combines seasonal Barilla® Snowfall pasta with tender chicken, spinach, cranberries, walnuts, and feta cheese. Tossed with crisp apples and a bright lemon-honey dressing, it works perfectly either as a side dish for a holiday party or as a refreshing main entrée.
Ingredients
Serves 6
For Pasta:
| 1 | Box Barilla® Snowfall pasta |
| 1 | Pound boneless/skinless chicken breast, diced |
| 3 | Tablespoons extra virgin olive oil, divided |
| 5 | Ounces baby spinach |
| 1 | Cup dried cranberries |
| 1 | Cup walnuts |
| 1 | Cup feta cheese, crumbled |
| 1 | Cup Granny Smith apples, peeled and diced |
| To Taste | Sea Salt & Black Pepper |
For Lemon Dressing:
| 3 | Lemon, zest and juice |
| 1 | Cup extra virgin olive oil |
| 1 | Tablespoon Dijon mustard |
| 2 | Tablespoons honey |
| To Taste | Sea Salt & Black Pepper |

Method
Step 1
Bring a large pot of salted water to a boil. Cook pasta 1 min. less than package directions. Drain well and spread on a sheet tray to cool. Drizzle with 1 tablespoon olive oil and set aside.
Step 2
In a skillet over medium-high heat add remaining olive oil, chicken, salt, and pepper. Cook on each side for 4-5 minutes or until 165° F, then set aside.
Step 3
For the dressing, add all ingredients in a bowl and whisk together until emulsified.
Step 4
In a large bowl, add pasta, chicken, spinach, cranberries, walnuts, feta, and apples.
Step 5
Pour dressing over the mixture, season to taste, and mix well.
Step 6
Refrigerate for 1 hour then serve.
